Marinade
1 Tbspground coriander
1 Tbspground cumin
1 Tbspground cardamom
1 tspcayenne pepper
omit or reduce for less spice
2 tspsmoked paprika
2 tspcooking salt
½ tspblack pepper
1 tspgarlic
finely minced
2 Tbspfresh lemon juice
3 Tbspextra virgin olive oil

Instructions
Marinate chicken
Step 1
Combine the marinade ingredients in a large bowl. Add the chicken. Use tongs to make sure each piece is coated in the marinade. Marinade for 12-24 hours.
Cook chicken
Step 2
Heat 1 tbsp of oil in a large non stick frying pan over medium heat. Place half the chicken in the pan and cook for 3-4 minutes on each side until deep golden brown. Transfer to a plate and cover loosely with foil.
Step 3
Option to bbq the chicken cook the first side for 4-5 minutes then the second side for 3-4 minutes until golden brown
