Instructions
Step 1
Cook red and pearl onions in butter in medium skillet over medium heat until soft.
Step 2
Rub pork loin with salt and epper; place in slow cooker. Add onions, sherry nand parsley. Cover; cook on low 8-10 hours or on high 5-6 hours.
Step 3
Remove pork loin to cutting board. Cover loosely with foil; let stand 10-15 minutes before slicing.
Step 4
Stir water into cornstarch in small bowl until smooth. Whisk into cooking liqquid in slow cooker. Cook on high 15 minutes or until sauce has thickend. Serve slce pork loin with onionns and sherry sauce.
