Step 1
In a glass meal prep container add your rice, chicken, capsiums, onion, fajita seasoning and then the stock.
Step 2
Mix until everything is well combined.
Step 3
Top with the mozzarella cheese.
Step 4
Bake in the oven for 30-40 minutes until cooked. Cover with foil halfway through baking to stop the top from getting burnt.
Step 5
Let cool and store in the fridge.
