Instructions
Step 1
Brown ground chuck in a large dutch oven or pot. Remove browned meat and drain excess fat.
Step 2
Add 2 tbsp oil to pot and add onion, green pepper, and garlic. Cook until starting to tender. Add all spices and seasonings to lightly toast them and coat the vegetables.
Step 3
Return meat to the pot. Stir in tomato sauce and water. Stir in chili beans. Bring to a boil.
Step 4
Lower heat and simmer for at least 1 1/2 hours. The longer the better. Add more seasonings as needed.
