Instructions
Step 1
Preheat oven to 375. Cut four peppers in half, de-seed, rinse, brush with avocado oil and place in baking dish.
Step 2
In a large skillet, add 1 c diced onion and 3 cloves diced garlic with 1 tbsp of water, sauté until onion is soft.
Step 3
Add 1 lb ground turkey. Brown.
Step 4
Add 1 bag frozen cauliflower rice and warm about five minutes.
Step 5
Add salt & pepper to taste, 2 tsp cumin, 2 tsp chili powder, 2 tbsp lime juice, and 2/3 c salsa. Stir.
Step 6
Rinse 15 oz can of black beans. Add to the cauliflower rice and mix thoroughly to combine.
Step 7
Generously stuff each pepper with the cauliflower mixture. Cover the dish with foil and place in the oven 30 minutes.
Step 8
Remove foil and bake for 15 additional minutes. Top with salsa, cilantro, avocado, hot sauce, etc.
