Ingredients

16 ouncessilken tofu
1 cupgluten-free flour
rice blend
1 teaspoonbaking powder
1 ½ tablespoonsmaple syrup
½ cupwater
plus more as needed
¼ cupoil
1 tablespoonchia seeds
For the Berry Sauce:
Instructions
Step 1
Transfer the tofu to the blender canister with a slotted spoon, leaving the liquid in the packet.
Step 2
Add the flour, baking powder, maple syrup, and water to the blender. Blend until just smooth. Add the oil and blend once more until just incorporated.
Step 3
Mix in the chia seeds using a large spoon. Transfer to a pourable cup.
Step 4
Pour batter into pre-heated waffle maker until about three-quarter full. (Do not use more than ¾ cup batter). Cook until no more steam is coming from the waffle maker. Serve with maple syrup or berry sauce.
(Note: These waffles will be creamy on the inside when cooked.)
Step 5
Optional Sauce: Heat the berries with the water in a medium saucepan over medium-heat. Add the cornstarch mixture, and vanilla. Cook until a sauce-like texture. Turn off the heat and mix in the chia seeds. Adjust water and chia seeds for desired thickness. (Note: The sauce will continue to thicken from the seeds.) Add maple syrup to taste.
