Ingredients

1 ⅓ cupsminute rice
1 cupgreen pepper
coarsely chopped
1 cupred bell pepper
coarsely chopped red pepper
1 cupcelery
diced
¾ cuponion
thinly sliced
3 tablespoonsvegetable oil
or olive
2 ½ cupschicken stock
¼ cupcornstarch
4 tablespoonssoy sauce
2 cupschicken
slivered, cooked
3roma tomatoes
cut in thin wedges
1can water chestnuts
chow mein noodles
Instructions
Step 1
Prepare rice as directed on package. Keep warm. Meanwhile, cook peppers, celery, and onions in heated oil in covered Skillet over low heat until tender but not browned. Blend cornstarch with a small amount of chicken stock, add remaining stock and soy sauce. Gently stir chicken, water chestnuts, and stock into vegetables. Cook and stir until sauce is clear and thickened. Add tomatoes and cook until just heated. Serve over rice. Top with chow mein noodles. Serves 4-6
