Instructions
Step 1
Place veggies and garlic on a lined baking sheet and season then roast for 40min at 425
Step 2
Blend all veggies with cottage cheese
Step 3
Add sauce into a saucepan and simmer then add in 1c pasta water, parmesan cheese, and seasonings
Step 4
Toss with pasta and serve with shredded cheese on top
