LEMONY CHICKPEAS AND SPINACH SOUP!
The freezing weather here in Boston calls for a comforting and delicious soup!🥣
This rich soup, loaded with barley and veggies, and seasoned with Hawaij spice, is going to be your new favorite!

Recipe:
Ingredients-
4-5 celery sticks with the leaves, roughly cut
2 potatoes, peeled and cut to cubes
1/2 cup of pearled barley
1 sweet onion, chopped
1/2 celery root, peeled and chopped
4 whole garlic cloves
2 cups of precooked chickpeas, washed and drained
4 tablespoons of olive oil
1.5 teaspoons of salt
1/4 teaspoon of black pepper
1.5 teaspoons of Hawaij spice
1 teaspoon of garlic powder
4 tablespoons of olive oil
8-10 cups of boiling water to cover the veggies
Handful of cilantro leaves
Topping-
2.5 cups of baby spinach
Juice from 1/2 lemon
2 minced garlic cloves
Method-
1. Put all the chopped veggies, chickpeas, barley, and all the seasoning in a large pot.
2. Mix it all together.
3. On medium heat, sauté and stir the veggies for 1-2 minutes.
4. Pour boiling water to cover the veggies.
5. Add handful of cilantro leaves on top.
6. Cover with a lid and cook on medium heat for 45 minutes.
7. Add the spinach, minced garlic, and lemon juice.
8. Stir it well and cook for 1 more minute.
9. Serve it in a nice soup bowl and sprinkle some chili flakes.
