This meal is budget friendly and simple to throw together. It has a long cook time, but you can either use the crock pot, or do it the old fashioned way, on the stove. Regardless of the long cook time, this meal is hearty and hot on these cold winter days. Serve with fried potatoes and hot, buttered corn bread.

Instructions

Step 1
You can choose to soak your beans overnight, or you can use this method. If you are like me, I always forget to soak them overnight. Instead, I pick through the beans, discard and discolored or visually altered beans. Rinse the beans, place them in a Dutch oven, or heavy bottomed pot, add 4 cups of water, place pot over high heat and bring to a boil. Once the water has come to a full boil, cover the pot, turn off heat, and allow to steam for 1 hour.
Step 2
Once beans have steamed for an hour, drain and rinse them. In the Dutch oven, add olive oil and onion, cook until softened. Then add the ham pieces and allow to heat through. Then, add the garlic and let cook for 1 minute. Add the beans back to the pot and mix it all together. Add in 4 more cups of water and the bullion cubes. Cover and bring to a rolling boil, stirring occasionally.
Step 3
Allow the beans to cook on medium high heat for 1 hour. Reduce heat and remove lid. Continue to cook, adding water as needed, until beans are completely cooked through, at least 2-3 more hours.
Step 4
If you want a more souplike texture, add enough water to achieve this. I like our beans thick so we let the water soak up and steam out.
Step 5
Once done, allow to cool slightly and serve with (or over) fried potatoes and hot, buttered cornbread. Enjoy!
