Instructions

Step 1
Slice your steak thinly and against the grain for optimal tenderness.
Step 2
In a bowl, mix soy sauce, Oyster sauce, stock, brown sugar, and bone broth (optional) until sugar dissolves.
Step 3
Season beef pieces with salt, pepper, a tiny bit of soy sauce, a bit of vegetable oil and a splash of water. Mix well.
Step 4
Coat beef pieces with cornflour and let it sit in the refrigerator for 15 minutes.
Step 5
In the meantime, cut your onion and your green onion into large chunks.
Step 6
Once 15 min has passed, remove your beef from the fridge and add another coat of cornflour to your beef.
Step 7
Heat up a pan, and shallow fry your beef pieces for about 3 minutes. Don't overcrowd your pan and if needed, cook the beef in multiple batches.
Step 8
Remove the beef pieces from the pan and strain oil.
Step 9
Leave just a bit of oil in the pan to fry your vegetables.
Step 10
Plate your onions into the same pan on medium-high heat for 3 minutes, then add your sauce mixture and mix for about 1 minute before adding your green onion and your beef pieces.
Step 11
Turn down the heat, and mix well so that the beef is fully coated with the sauce. Serve and enjoy!
