Thai Basil Beef
THAI BASIL BEEFđśď¸ Iâm always trying to find ways to incorporate more red meat into my diet and this one pan dinner is IT.
Recipe:
â˘2 tbsp olive oil
â˘1 lb grass fed ground beef
â˘1 red bell pepper, thinly sliced
â˘1 yellow onion, thinly sliced
â˘1 cup sugar snap peas
⢠5 cloves garlic, minced
â˘1 cup loosely packed Thai basil (reg basil if you canât find Thai)
â˘fresh cilantro, optional
â˘2 tbsp red curry paste (or chili paste)
â˘3 tbsp coconut aminos or tamari
â˘salt, to taste
â˘1 tbsp sesame oil
â˘1 tsp apple cider vinegar
1. In a small bowl, mix together curry paste, coconut aminos, sesame oil and apple cider vinegar until combined.
2. Heat oil in a large skillet set over medium high heat. Add the ground beef and cook until browned, breaking it up with a spoon and stirring often, about 6 minutes.
3. Add the bell pepper, onion, sugar snap peas and garlic to the beef and cook until vegetables start to soften, about 5 minutes.
4. Pour the sauce mixture along with the fresh basil (reserving a fresh few leaves for the top) and continue cooking until basil starts to wilt.
4. Serve over brown rice and top with fresh basil and fresh cilantro.
