Instructions
Step 1
Heat olive oil in a medium skillet over medium heat.
Step 2
Once oil is warm add in the garlic and fennel seeds and cook until fragrant; about 30 seconds.
Step 3
Add the red onion to the skillet and cook for 2-3 minutes until softened.
Step 4
Next, add the diced tomatoes and deglaze the pan.
Step 5
Then add the white beans and mix in until warm.
Step 6
Add kale and stir in until wilted then remove from heat.
Step 7
Stir in the lemon juice and red pepper flakes. Taste for additional seasoning and add salt and ground black pepper.
Step 8
Top with vegan parmesan if using and serve with warm crusty bread for dipping.
