Canellini Beans in a Golden Tomato Garlic Sauce

Ingredients
2 servings
2 punnetscherry tomatoes
0.5red onion
5cloves of garlic
2Tins Canellini Beans
or 1 tin of Canellini & 1 tin Butter Beans
fresh basil

Instructions
Step 1
Dice the onion, finely chop the garlic and half the tomatoes.
Step 2
Heat oil in a large pan and fry off the onion for 5 mins.
Step 3
Add the garlic and as soon as it starts to colour, add the tomatoes. Once they start to break down, add just a little splash of water to keep it juicy.
Step 4
When they are nice and saucy, use a stick blender or normal blender to blend until roughly smooth.
Step 5
Drain the cannellini beans and add them into the saucy mixture.
Step 6
Let simmer for a couple of minutes then serve with lashings of olive oil, basil and pibe nuts. Serve hot and with some good quality crusty bread!
