Instructions
Step 1
Brown ground beef in a hot skillet until cooked through, seasoning with garlic, onion powder, paprika, salt, and pepper to your taste.
Step 2
While the meat is browning, combine chunked up tomatoes, onions, jalapeños and cilantro in a blender or food processor. Adding water and chicken bouillon and process until smooth.
Step 3
Add cubed potatoes,additional garlic, onion powder, paprika, salt, and pepper all to your taste.
Step 4
Next, Pour pureed vegetable smoothie to pan bring to a simmer and cover. Cook 30 minutes or until potatoes are tender.
Step 5
Top with Mexican cheese to your liking and serve with tortillas.
