Instructions

Step 1
Start buy heating a large pot and pan over medium heat.
Step 2
Chop your vegetables.
Step 3
Drop half a stick of butter into your sauté pan.
Step 4
Once the butter has melted, add in your chopped vegetables and let them cook down for roughly 30 minutes stirring occasionally.
Step 5
At this point, preheat your oven to 350°.
Step 6
Once you've got your vegetables cooking, get a roux started in your large pot.
Step 7
Add a stick of Salted Butter and 1/3 Cup of Flour. Stir Constantly to a peanut butter color.
Step 8
This can be tricky, because you want to stir your vegetables occasionally as well. Adjust your heat accordingly so not to burn.
Step 9
If you get to a peanut butter color quickly, just turn the heat off and let it sit. It will be fine.
Step 10
After sautéing the vegetables for about 15 minutes, add the Minced Garlic.
Step 11
After an additional 10 minutes of simmering, add the rotel and sugar. Let it cook down for 5 minutes.

Next add the heavy whipping cream.

Add the chili powder and Cajun Seasoning. Mix well.
Step 14
If you have a peanut butter color roux, add the contents of the pan to the roux, and mix well.

Add the crawfish and let cook for 10 minutes.

Next you will add half of the Jalapeño Velveeta. Cut it into slices so that it melts evenly throughout the dish. Take the other half and put it in the freezer. It will make it easier to grate.

Once the mixture is creamy throughout, you want to begin piecing together the Casserole.

Spray the bottom of a 9x13 baking dish with a non-cooking spray.
Step 19
Cut the Flour tortillas into square and rectangle shapes, layering the bottom of the dish.

Spread a few spoonfuls of the creamy crawfish mixture over the tortillas.

Then add another layer of tortillas.
Step 22
Repeat 1 to 2 more times depending on how much you've spread or how deep the dish is.
Step 23
The top layer should be the creamy crawfish mixture.
Step 24
Grate the other half of your velveeta, and sprinkle across the top.

Bake for 20 minutes, cool for 5-10 minutes, then serve and enjoy! 😊
