Instructions
Step 1
Preheat the oven according to the package of the bake-off bread and bake according to the package. Prepare the vegetable stock.
Step 2
Cut the carrots into half circle slices, the leeks into half rings and the onion into quarter rings. Fry it in an dutch oven with butter on medium heat. Finely chop the parsley.
Step 3
While that’s cooking, prepare the mussels. Brush each mussel in cold water, and try to close them. Leave out every mussel that stays open, that’s heavy or has a broken shell.
Step 4
When the bread is done, bake the fries in the oven according to the package. Salt the fries when they are done.
Step 5
Add the white to the vegetables and reduce. Cook the mussels for 2 minutes in the dutch oven with the lid on. Shuffle them and cook again for 2 minutes. Add the stock, bay leaves and parsley and reduce for another 5 minutes. Add pepper to taste.
Step 6
Grate the cheese and cut the bread into thick halve slices.
Step 7
Serve the mussels in the dutch oven, together with the fries and the bread with cheese. After you’ve eaten the mussels and fries, you can dip the liquid by putting some cheese on your plate, dipping the bread in the liquid and pressing it into the cheese so it will stick to the bread.
Step 8
You can keep the leftover liquid to eat as soup the next day.
