Thai Chicken Burgers

Thai inspired chicken burgers with spicy peanut slaw✨ For the Chicken Patties:▪️1 lb. 96% Lean Ground Chicken (not ground breast)▪️3 Cloves Garlic, minced▪️3 Scallions, sliced▪️1/4 Cup Fresh Basil Leaves, roughly chopped▪️1 Thai Chili, minced (or sub 1/2 jalapeño seeds removed)▪️1 Tbsp Fish Sauce (or sub soy sauce)▪️1 Lime, juice▪️1/4 tsp Kosher Salt▪️1/4 tsp Pepper▪️1 tsp Sugar▪️2 tsp Ground Coriander▪️ For the Slaw:▪️3 Tbsp Creamy Natural Peanut Butter▪️1 Lime, juice▪️1 tsp Sugar▪️1 Tbsp White Vinegar▪️2 tsp Soy Sauce▪️1 tsp Sriracha or Chili Sauce▪️1 Tbsp Water▪️2+1/2 Cups Red Cabbage▪️1/2 Cup Shredded Carrots▪️ For the Burgers:▪️3 Kaiser Rolls (or buns of choice)▪️1/2 a Cucumber, sliced thin▪️Basil Leaves, for garnish▪️ 1️⃣ First, make the slaw: Whisk together the peanut butter, lime juice, sugar, white vinegar, soy sauce, sriracha, and water; add the cabbage and carrots and mix; set aside 2️⃣ Preheat oven to 350F 3️⃣ Add all the ingredients for the chicken patties to a bowl and mix; form into 3 burger patties with your hands 4️⃣ Preheat a large pan over medium heat and add 1 Tbsp oil; place the burger patties in the pan (I found using my hands was easiest for this) and cook 2-3 mins per side (until golden brown) then transfer to the oven and bake 10-12 mins until internal temp reaches 165F 5️⃣ Toast buns cut side up under the broiler for 1-2 mins until golden brown and serve with the chicken burger patties, sliced cucumber, peanut slaw, and basil on top - enjoy! ⏲20 minute prep time + 30 minute cook time Recipe makes 3 burgers

Instructions

Step 1
1️⃣ First, make the slaw Whisk together the peanut butter, lime juice, sugar, white vinegar, soy sauce, sriracha, and water; add the cabbage and carrots and mix; set aside

3️⃣ Add all the for the chicken patties to a bowl and mix; form into 3 burger patties with your hands

4️⃣ Preheat a large pan over medium heat and add 1 Tbsp oil; place the burger patties in the pan (I found using my hands was easiest for this) and cook 2-3 mins per side (until golden brown) then transfer to the oven and bake 10-12 mins until internal temp reaches 165F
