CREAMY GREEKY PROTEIN POWER BOWL
I eat a variation of this salad at least 3 times a week. when I posted on my stories you guys went mad for it so here is the recipe. The best thing about this salad is you just chuck everything into one bowl, including the dressing ingredients and mix. It’s so satisfying but perfectly balanced, full of protein and fibre to keep you feeling full and only takes 5 minutes.
420kcal and 43g protein
You will need
Large handful of rocket
1/4 cucumber, diced
Handful of cherry tomatoes, in 1/2
Handful of Kalamata olives, chopped
1 tbsp chopped dill
1/4 red onion, finely diced
50g crumbled feta cheese
Protein of choice, I opted for 100g shredded chicken
Dressing
1 heaped tbsp thick yoghurt
1 heaped tsp mustard (I like wholegrain)
1 tsp balsamic vinegar (or use a little lemon juice)
1 tsp honey
Stick into one bowl, season with salt and pepper and mix. Done!
