Instructions
Step 1
Start by making deep gashes on the chicken legs and place them in a large bowl.
Step 2
In a blender, add onions, garlic, ginger, chipotle peppers in adobo sauce (or chipotle paste), salt, black pepper, paprika, mixed herbs, and vinegar.
Step 3
Blend all the ingredients until you get a smooth sauce-like consistency.
Step 4
Slowly add the neutral oil to the blender while it's running. Continue blending until the mixture is well combined and forms a smooth sauce.
Step 5
Pour the marinade over the chicken legs in the bowl. Make sure all the chicken legs are coated with the marinade.
Step 6
Cover the bowl with plastic wrap or a lid and let the chicken marinate in the refrigerator overnight or for at least 5-6 hours. This will allow the flavors to infuse into the chicken.

After marinating, you have multiple cooking options. You can grill the chicken legs, bake them in the oven, or use an air fryer.

If grilling, preheat the grill to medium-high heat. Place the marinated chicken legs on the grill and cook for about 15-20 minutes per side or until they are cooked through and have a nice char.

If baking, preheat the oven to 400°F (200°C). Place the marinated chicken legs on a baking sheet lined with aluminum foil. Bake for 25-30 minutes or until they are cooked through and golden brown.

If using an air fryer, preheat it to 400°F (200°C). Place the marinated chicken legs in the air fryer basket and air fry for 20-25 minutes or until they are cooked through and crispy.

Once cooked, remove the chicken legs from the grill, oven, or air fryer and let them rest for a few minutes before serving.

Note: If you prefer a spicier flavor, you can add 2-3 red chilies, 1/4 cup of hot sauce or sriracha sauce, or 2 tbsp of red chili powder to the marinade mixture before blending. Adjust the amount according to your preference for heat.
