Instructions

Step 1
Chop about 1 inch off the top of the leek. Thinly slice the remaining dark green parts until you reach the light green area. set dark green slices aside in a bowl of water. Cut the remaining leek in half longways, rinse out any dirt. thinly slice into half-moon shapes down to the root. set these slices in a different bowl of water. Rinse and drain bowl bowls.
Step 2
The sauce: In a large pot, add about 1 tbsp butter and melt. add the dark green slices and saute with a pinch of salt until they become soft, about 5 mins. add the remaining leek slices and continue stirring until it is all soft, about another 3-5 minutes. add water and heavy cream. stir to combine, add cheese. season to taste and let reduce slightly. Add cooked pasta and combine.
Step 3
In a new pan, melt butter and toast a few tablespoons of panic breadcrumbs along with a pinch of salt and a tablespoon of lemon zest. Once toasted, use as a garnish for the pasta.
