Instructions
Pre heat oven
Step 1
Pre heat an oven to 220c. Lay a baking sheet on a baking tray.

Peel and chop onions

Fry chopped onions

When golden, add spinach to onions with a pinch of salt

Add chopped spring onions to pan and sprinkle garlic flakes

Break off frozen spinach with spatula

Stop frying and let mixture cool off

Grate zucchini

Rinse and strain zucchini

In a separate bowl, whisk an egg and add 150 gr of ricotta cheese. Mix.

add salt, pepper, dry garlic, chili flakes, dried parsley, and mix.

add grated zucchini and keto flour (or other low carb flour like almond flour). Mix.

Add the cool fried onions and spinach to the mixture and blend those in.

Make the fritters

Using a spoon, take chunks of the mixture and shape into patties. Flatten and tight those onto the tray.



Bake the fritters

Bake fritters in the oven for 20-30 minutes or until baked to your liking.
