Instructions

Step 1
Finely dice the onion, then mince the ginger + garlic.
Step 2
Heat 2tbsp oil in a pan at medium heat, then saute the onion until softened with a pinch of salt (5-10 minutes).
Step 3
Add the ginger + garlic, cooking until fragrant.
Step 4
Add the spices, stirring well + allowing to cook for 1-2 minutes.
Step 5
Rinse the lentils, then add to the pot, mixing well.
Step 6
Add the tin of tomatoes, vegetable broth, coconut milk, soy sauce + peanut butter if using.
Step 7
Bring to a boil, then lower to a simmer for 15-20 minutes.
Step 8
Season to taste with salt, pepper + the juice of a lime.
Step 9
Serve with whatever you choose, and enjoy!
