PEANUT SATAY NOODLE SOUP
-1 garlic clove
-1 mild red chilli
-3 tbsp good quality peanut butter
-handful crushed roasted peanuts
-1 tbsp soy sauce
-1 tbsp brown sugar
-juice of 1 lime
-pinch of salt + MSG
-few tbsp coconut cream
-mushrooms, garlic powder, soy sauce + oil
-pak choi, coriander, crispy onions, spring onion and vermicelli noodles, chilli oil

Instructions
Step 1
-mash the chilli and garlic into a paste then fry until fragrant before mixing with the peanut butter, soy sauce, sugar, lime, MSG/salt and stock then simmer for 10-15 minutes.
Step 2
-roast the mushrooms with the seasonings, soften your noodles in boiling water and steam the pak Choi.
Step 3
-stir in some coconut cream to the broth a few minutes before serving, do not boil.
Step 4
-serve the noodles in some of the broth, top with the mushrooms, pak Choi, coriander, chilli oil, crispy onions and crushed roasted peanuts.
