Chicken Caesar protein pasta salad jars
Chicken Caesar protein pasta salad jars!! Probably one of my favorite salad jar recipes to date…
Ingredients: makes 4 jars
4 servings protein pasta my favorite is
1 rotisserie chicken, skin removed, chopped into small pieces
1 European cucumber, diced
4 cups chopped romaine
2/3 cup shredded Parmesan cheese
For the dressing:
1/2 cup plain nonfat Greek yogurt
1/4 cup Parmesan cheese
1 tbsp lemon juice
1 tbsp Worcestershire sauce
1 tbsp minced garlic
2 tsp olive oil
1 tsp Dijon mustard
2 tbsp water
Salt and pepper to taste
Instructions:
1. Cook pasta according to package instructions then set aside to cool.
2. Chop the veggies, set aside, then chop your shred the chicken.
3. Prepare the dressing: I mixed everything together in the video then realized it needed to be blended so… add all dressing ingredients to a food processor or blender and blend until smooth. If too thick add some more water to thin it out.
4. To 4 glass jars add dressing, then layer with cucumber, chicken, pasta, lettuce, and Parmesan cheese.
5. Store in the fridge for up to 4 days!
