Zucchini Linguine with Garlic + Basil

zucchini linguine with garlic + basil 🌿 3 large courgettes 400g linguine pasta 2-3 garlic cloves olive oil for frying 1/2 tsp chilli flakes salt + pepper to season juice + zest of 1 lemon handful of fresh rocket + basil 1 cup pasta water vegan parmesan to serve 1. grate the courgettes into a bowl, drain any excess liquid and set aside. 2. Meanwhile cook the linguine in salted water for 1 minute less than on the packet. 3. Fry the garlic on a medium heat with chilli flakes for 2 minutes, then add the grated courgette and season with salt, pepper, lemon zest and juice. 4. Add in a handful of rocket and basil, as well as the drained pasta and a cup of pasta water. 5. Mix well and serve with vegan parmesan. Inspo from ’s speedy mob cookbook!

Instructions
