🍖 STEAMED RIBS IN PLUM SAUCE 話梅蒸排骨
This is one of my new favorite dishes!! I love the savory & tart sauce in this steamed ribs 😋
🍖 STEAMED RIBS IN PLUM SAUCE 話梅蒸排骨
- 1.5 lb of spareribs (pork back spareribs)
SOAKING WATER
- 1.5 tbsp of white vinegar
- 1/2 tbsp of salt
- about 3 cups of water (as needed)
BASE FLAVORS
- 1/4 tsp white pepper
- 1/4 tsp of salt
- 1/2 tsp of chicken bouillon
- 2 tsp of shaoxing wine
- 2.5 tbsp of cornstarch
SAUCE
- 1/2 tbsp of bean sauce
- 10 pieces of dried plum without pit (minced)
- 1/2 tbsp of ketchup
- 2 tbsp of sugar
- 1 tsp of seasoning soy sauce or oyster sauce
- 1/4 tsp of sesame oil
🍖 INSTRUCTIONS
1. Cut the rack of ribs into small pieces. Transfer them into a large bowl. Use cold water to wash and rinse the ribs. Soak in water with vinegar and salt to remove any gaminess.
2. Rinse and soak dried pitted plum meat in water. Chop into fine pieces. Set aside.
3. After soaking the ribs for 15 minutes, drain out the water and pat dry.
4. Season the ribs with white pepper powder, sugar, chicken, bouillon powder and shaoxing wine. Mix well. Add cornstarch to enhance the flavors. Add bean sauce, dried plum, ketchup sugar and soy sauce. Mix well again. Drizzle sesame oil.
5. Transfer to a shallow bowl & steam for 30-40 minutes until fully cooked and tender.
6. Enjoy with rice!
