Instructions

Step 1
Combine all ingredients for the dough. Drizzle with oil and let it rest about 2 hours until doubled.
Step 2
Finely chop the cabbage. If not using Chinese cabbage, add some salt and massage to break down the fibers. Set aside.
Step 3
In a pan fry the tofu and mushrooms until all the water has evaporated and they’ve got some color. Add the spring onion, garlic and ginger and cook for a few more minutes.
Step 4
Mix all ingredients for the filling.
Step 5
Degas the dough, poke a hole in the middle and stretch it out. Divide into even pieces and shape each piece into a ball. Cover with a kitchen towel.
Step 6
Roll out each ball into wrapper with thinner edges. Add about 1 tbsp of the filling and fold using your thumb and index finger, twist the top to seal.
Step 7
Steam the buns for 15-20 minutes in a steam basket using cabbage leaves (or parchment paper) to prevent from sticking.
Step 8
Serve with chili oil, dipping sauce or however you prefer and enjoy!
