Leek & Brussel Sprouts Creamy Pasta 🍝 The perfect quick bowl of happiness which also happen to be healthy👌🏻by Serves 2 Ingredients: 1 leek - finely sliced 150g brussel sprouts - finely sliced 2 garlic cloves - crushed For the cashew cream: 1/2 cup cashews - soaked into some boiling water for at least 30 minutes 1 cup of unsweetened plant milk like oat or soy 3 tbsp nutritional yeast 1 tsp dijon mustard 1/2 tbsp miso paste the juice of 1 lemon a generous crack of black pepper + salt to taste 2 portions of pasta of your choice Serve with: vegan parm or regular parmesan cheese Add a drizzle of olive oil to a frying pan and once hot add in the leek and brussel sprouts. Cook on a medium heat for around 10 minutes until the leek has caramelised and the brussels sprouts have softened. In the meantime make the cashew cream. Just add all the ingredients into a blender and blend until smooth and silky. Cook the pasta according to the packet’s instructions. Drain but make sure to reserve a couple of tablespoons of its cooking water. Add the cashew cream to the pan and stir everything together. Add in the pasta and the cooking water and mix well. Serve with some extra black pepper and some vegan parm.

Instructions

Step 1
Add a drizzle of olive oil to a frying pan and once hot add in the leek and brussel sprouts. Cook on a medium heat for around 10 minutes until the leek has caramelised and the brussels sprouts have softened.
