Creamy Mushroom & Sundried Tomatoes Orzo 🌱One of my favourite lazy dinners as it’s ready in under 20 minutes and everything cooks into one pan 👌🏻It also taste absolutely delicious 🫶🏻😋Full recipe below 👇🏻 Serves 2
Ingredients:
1 shallot - finely chopped
a drizzle of olive oil
200g chestnut mushrooms - sliced
1 tbsp mixed italian herbs
5-6 sundried tomatoes - chopped
150g orzo pasta
400ml veggie stock
1/2 can (400ml) coconut milk
2 handful of baby spinach
salt & pepper to taste
Serve with:
a sprinkle of vegan or regular parmesan
Add the olive oil to a pan on medium heat. Once hot add in the chopped shallot and cook for 5-8 minutes until it starts to caramelise. Add in the mushrooms and dried herbs and cook for another 5 minutes until lots of their water has evaporated. Add in the sun-dried tomatoes and stir everything together.
Add in the orzo pasta, veggie stock and coconut milk. Mix everything together and cook on a low/medium heat for 10-15 minutes until the orzo is cooked. Make sure to stir from time to time to prevent the orzo from sticking to the bottom of the pan.
Add in the spinach and stir until they have wilted. Serve with the vegan parmesan.
