Step 1
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, thyme, rosemary, pepper, and garlic powder (if using).

Season the beef roast with salt on all sides. Rub the balsamic mixture evenly over the roast.

Place the roast in your crock pot. Pour in the beef broth.

Cover the crock pot and cook on low for 6-8 hours, or until the beef is tender and falling apart.

About 30 minutes before the end of cooking, add the Brussels sprouts to the crock pot.

Once the cooking time is complete, carefully remove the roast and shred it using two forks.

Return the shredded beef to the crock pot and stir to combine with the Brussels sprouts and sauce.

Adjust seasonings with additional salt and pepper to taste.
