Spray crockpot with cooking spray and add chicken, salt, pepper, paprika, ranch seasoning, chopped onion, minced garlic, and chicken broth. Cook on low 4-6 hours. Once chicken is cooked, shred the chicken, add the cream cheese and shredded cheddar cheese. Continue cooking on low until cream cheese is melted and stir together. Cook bacon while cream cheese is melting. Build sandwiches and top with bacon.
