2️⃣ CREAMY COCONUT RAMEN 🍜 written recipe below 👇🏾
A deep, rich and creamy ramen full of umami flavours and goodness 😃
👇🏾ingredients👇🏾
-3 garlic cloves
-2 spring onion
-1 tbsp curry powder
-2 tbsp peanut butter
-2 tbsp crushed roasted peanut need
-500ml veg stock
-250ml coconut milk
-juice of 1 lime
-1/2 tsp MSG
-1 tbsp soy sauce
-1 tbsp brown sugar
-1 tbsp soy sauce
-handful of mushrooms + 1 tbsp garlic powder + oil
-handful of crushed peanuts
-ramen/soup noodles to serve to 2
-wonton/dumplings
-chilli oil, crushed roasted peanuts, chives, coriander, lime, sesame seeds, nori sheets to garnish
👇🏾method👇🏾
-fry your minced garlic and spring onion until soft and browned then add the spices and fry for another few minutes before the veg stock, lime juice and then simmer to thicken and reduce.
-mix the peanut butter, sugar and soy sauce then add your broth to this mixture.
-roast your seasoned mushrooms in the oven, halfway through add the crushed peanuts.
-boil/steam your dumplings, also boil your noodles until almost cooked then serve with the hot broth and dumplings topped with the garnishes and e

Instructions
Step 1
Pre-heat the Oven

Step 2
Boil a large pot of water

Step 3
Stir fry aromatic ingredients






Step 4
Add the vegetable stock and lime juice; simmer to thicken and reduce

Add soy sauce and peanut butter

Season the mushrooms and put in the oven
