1.25 lbfresh collard greens
stemmed and chopped into 2-in pieces
⅔ cupall-purpose flour
1 ½ teaspoonground black pepper
2 x 8.5 ouncecorn muffin mix

2eggs

⅔ cupmilk
8 ozpepper jack
shredded
2 ½ tablespoonshot pepper vinegar
2 ¼ cupschicken broth
Instructions
Step 1
Preheat oven to 425. Spray a 13x9-in baking dish with cooking spray
Step 2
Heat a large stock pot over medium high heat. Add 3/4 lb sliced smoked sausage, 8 oz chopped ham, 1 3/4 cups chopped red bell pepper, and 1 1/4 cups chopped onion, and 4 minced cloves garlic. Cook and stir frequently until onion is translucent, about 10 minutes.
Step 3
Stir in greens, cook a stirring frequently for 15 minutes
Step 4
Stir in 2/3 cup flour and pepper. Stir in 2 1/4 cups chicken broth and one 1.5 Tbsp hot pepper vinegar. Stir for 5 minutes.
Step 5
Pour mixture into baking dish
Step 6
In a large bowl, whisk together a two packages of corn muffin mix, two large eggs, 2/3 cup milk. Whisk until smooth, stir in 8 oz shredded pepper jack.
Step 7
Spread batter onto greens mixture
Step 8
Bake for 20 minutes. Reduce oven to 350, and bake 25mn (until topping is golden brown and cooked through). Let stand for 10 minutes before serving.
