Instructions
Step 1
1. Take tofu out of fridge and wrap in paper towel(s) to drain. As this is being done, set aside and gather other ingredients and tools.
Step 2
In a food processor, add in semi-drained tofu. Break the tofu block into 8 or 12 pieces to evenly distribute the ingredient. Optional: To mix everything a little easier, pulse the tofu a few times before adding other ingredients.
Step 3
Add in the cocoa powder and sweetener of choice. This would also be the time to add in vanilla extract if desired.
Step 4
Turn the food processor on and mix normally (not pulsing) for 5 to 7 minutes or until appropriately blended/smooth. Every so often, use a silicone spatula to scrape the sides so everything is mixed well.
Step 5
Once smooth, taste test, and add any extra sweetener or cocoa powder, if desired.
Step 6
For using 1 full pack of tofu, divide the mixture into four small bowls (the number of portions is dependent on the size for each portion) Note: If making more portions I have found that small bowls around 5 to 6 ounces work really well
Step 7
Place the bowls in fridge or freezer. It can be served right away, but I have found that allowing it to sit in the freezer for 30 minutes (as I clean the kitchen) is really delicious. If not serving right away, it can be stored in the fridge (covered with saran wrap, or a lid if the bowl has one.
Step 8
Serve! serve as is or add toppings! Topping Ideas: - Raspberries/Blackberries - Shaved Chocolate/Chocolate Chips - Whipped Cream - Sprig of Mint - Roasted Peanuts - Roasted Almonds (tossed in cinnamon)
