Coconut Chicken Soup
This soup was def up in my top 5 soups I’ve made, it was so delicious🥰
What you need:
1 Large Shallot or 1/2 Onion
1 Tbsp Minced Garlic
1 Tbsp Minced Ginger
2 Tbsp Red Curry Paste
250g Tenderstem Broccoli
2 Heads Pak Choi
1-2 Ltr Chicken Stock (I used 2)
1 Can Coconut Milk
Leftover Chicken/Rotisserie Chicken
400g Rice Noodles
1 Tsp Brown Sugar
1-2 Tbsp Soy Sauce or Fish Sauce
Lime
Coriander
Chilli Flakes
What to do:
Heat 1-2tbsp olive oil in a large pot, add onion and cook for 3-5 mins over a low heat, mix in garlic & ginger & heat for 1 min.
Add in curry paste and heat for 1-2 mins
Pour in stock & coconut milk, season well.
Add broccoli, cover and simmer for 5-7 mins.
Add in rice noodles and pok choi and cook for 6-8 mins until noodles have softened.
Mix in sugar and soy sauce.
Serve with lime wedges, soy sauce, chilli flakes & coriander 🌿
