SLOW COOKER SOUTHWEST TURKEY CHILI

Ingredients

1onion
chopped

1red bell pepper
seeded and chopped

1 poundground turkey 93% lean

2 teaspoonsolive oil

2 tablespoonschili powder

½ teaspoongarlic powder

½ teaspooncumin

1 teaspoonsmoked paprika

½ teaspoonblack pepper

3 cupsunsalted chicken broth

8 ouncecan unsalted tomato sauce

14.5 ouncecan unsalted diced tomatoes

15 ouncecan black beans
drained and rinsed

1 Cupfrozen corn

2 tablespoonscilantro
chopped
Instructions
Step 1
Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey, chili powder, garlic powder, cumin, smoked paprika, salt, and pepper.
Step 2
Cook for 5-7 minutes until turkey is browned. Break up the turkey into smaller pieces with your spoon as you stir.
Step 3
Place the turkey in a slow cooker along with the onion, bell pepper, chicken broth, tomato sauce, and diced tomatoes.
Step 4
Cook on HIGH for 4 hours or LOW for 6 hours.
Step 5
Stir in the black beans and corn, cook, uncovered for an additional 20 minutes.
Step 6
Sprinkle with cilantro and serve.
