Instructions

Step 1
Cook the quinoa according to package directions with 1/2 teaspoon salt added to the water. Cool completely.
Step 2
To a large bowl add the quinoa, chickpeas, arugula and chopped veggies. Mix all the ingredients together.
Step 3
In a small jar mix all dressing ingredients together.
Step 4
Drizzle salad with the dressing and garnish with basil.
