SHEET PAN CHICKEN FAJITAS
SHEET PAN CHICKEN FAJITAS✨ an easy, delicious recipe I come back to again and again! It’s perfect for busy weeknights because it’s done on one sheet pan and cook time is just 30 minutes. Ingredients:
2 bell peppers, sliced 1/2 inch thick
1 red onion, halved and sliced 1/2 inch thick
2 lbs boneless, skinless chicken thighs
2 tablespoons avocado oil
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon smoked paprika
1/2 teaspoons chili powder
1/2 teaspoons garlic powder
2 teaspoons salt
1 teaspoon pepper
Serve with:
almond flour tortillas
guacamole
chopped fresh cilantro
your favorite salsa
Directions:
Preheat your oven to 425ºF
Add your bell pepper and onions to a large sheet pan along with the chicken thighs (you may need to use two sheet pans so as not to overcrowd the pan)
In a small bowl, combine your spices, salt and pepper then toss the bell peppers, onions, and chicken
Bake for 30 minutes. Slice the cooked chicken into 1/2 inch strips and serve with tortillas, guac, salsa, and cilantro
