Crispy Prawn and Chive Dumplings
This is one of the most delicious things I’ve made recently and it’s super easy to make with rice paper instead of a classic dumpling wrapper.
RECIPE (makes 6 dumplings, serves 1; scale up as needed):
150g prawns, finely chopped
3 tbsp chives, finely chopped
1/2 garlic clove, minced
Small knob of ginger, minced
1 tsp sesame oil
1 tsp soy sauce
1 tsp cornflour
Pinch of salt & pepper
3 rice paper sheets
Olive oil
Dipping sauce:
2 tbsp soy sauce
1 tsp rice vinegar or black vinegar
1 tsp chilli oil (
)
1. Stir together the prawns, chives, garlic, ginger, sesame oil, soy sauce, cornflour, salt and black pepper.
2. Dip a sheet of rice paper into room temperature water for a few seconds until beginning to soften (don’t over soak as they will continue to soften).
3. Cut the rice paper sheet in half.
4. Add a spoonful of the prawn mixture (~1 tbsp) to the centre and fold the rice paper over the filling to seal it in.
5. Brush both sides of the dumpling with oil and set aside.
6. Repeat until you’ve used up all of the mixture (this should make 6 dumplings).
7. Put a non-stick pan on medium heat and brush with oil.
8. When hot, add the dumplings and pan fry for 4-5 minutes on each side until the prawns turn pink and the rice paper becomes golden and crispy.
9. Serve with the dipping sauce and enjoy!
