Instructions
Step 1
Place the asparagus, milk, and water in a large saucepan. Add salt and pepper, and stir. Bring to a boil over high heat. Stir, reduce heat to medium-low, and simmer, uncovered, for 8 to 10 minutes, or until asparagus is tender.
Step 2
Pour the soup into a blender. Remove the center spout from the lid to prevent it from bursting. Place the lid on the blender, and hold a kitchen towel over the center hole. Purée soup until it is blended. Whip the soup for 1 minute more and return it to the saucepan.
Step 3
Heat the soup on low until warm. Taste and adjust seasonings, if necessary. Pour into clear glasses or coffee mugs, and top with parsley.
