Salmon and Egg Donburi

【Recipe】Simple but always delicious Salmon & Egg Donburi. A nice twist from the familiar Oyako Don we all love. Just one of my favourite ways to serve my kids salmon 🙌🏻 Something about that creamy soft egg and sweet caramelised onions, makes it so comforting 😋 Pre marinate and lightly pan sear the salmon helps remove any fishy taste and also holds the shape better. You can opt to air fry the salmon too if frying ain’t your thing 😁 ———————- 500g salmon fillet, cut into smaller pieces 1 large yellow onion, sliced 4 garlic cloves minced 5 large eggs Marinade 1 tsp sea salt 1 tsp pepper Seasonings for onion 1.5 tbsp soy sauce 1.5 tbsp mirin Seasoning for eggs 1 tbsp soy sauce 1 tbsp mirin Method 1) Combine salmon pieces with marinade. Then lightly coat the salmon pieces with rice flour and pan fry 3-4 mins on each side till golden brown. Dish up. 2) Crack 5 eggs in to mixing bowl along with egg seasonings. Give it a light whisk. Set aside 3) Sauté the onions and garlic with 2 tbsp cooking oil over low heat. Once onions starts to soften, add in seasonings for onions and continue to cook for a minute. 4) Pour 4/5 of the eggs over the onions. Return the salmon pieces over the eggs before it sets. Stir in a little. 5) When eggs are almost cooked through, off heat and pour remaining egg over. Don’t worry, the remaining heat will slowly cook the eggs but it’ll still be soft and creamy. 6) Garnish and serve with steam rice. Enjoy! —————————————

Instructions

Step 1
1) Combine salmon pieces with marinade. Then lightly coat the salmon pieces with rice flour and pan fry 3-4 mins on each side till golden brown. Dish up.
