Ingredients
10 servings

1 cupwater

3medjool dates
or 6 regular dates, pitted

½ cupraw cashews

½ cupwalnuts
½ teaspoonpure vanilla bean powder
or 1 teaspoon alcohol-free

vanilla extract

½ teaspooncinnamon
For the Dry ingredients:

Step 1
Pre-heat oven to 250°
Step 2
Place water, dates, cashews, walnuts, vanilla and cinnamon in a high-powered blender and blend until smooth.
Step 3
Mix oats, seeds and pecans in a large bowl. Gradually stir in the "batter".
Step 4
Place mixture onto several baking trays and bake in a 250 degree F oven for 2 hours, stirring every 20 minutes. Cook longer if crunchier granola is desired.
