Instructions
Step 1
preheat oven to 374 degrees Fahrenheit. line a baking tray with baking paper and grease with coconut oil so the bars are easy to remove later



Step 2
in a small bowl, combine chia seeds with 150ml of the water. Leave to rest

Step 3
in a saucepan, heat dates and coconut oil over a low heat for 10-15 minutes


Step 4
put dates in a high speed blender with remaining water and blend until you get a smooth texture

Step 5
in a large bowl, mix together the oats, seeds, soaked chia seeds, goji berries, cinnamon and vanilla

Step 6
stir through the date paste until well combined
Step 7
spoon mixture onto the prepared tray and bake in oven for approximately 30 minutes, until golden around the edges


Step 8
leave to cool for about 15-20 minutes before cutting into bars
