Instructions

Step 1
Combine milk and lemon juice, set aside for 5 minutes.
Step 2
Whisk the flours, sugar, baking soda, and salt together in a medium bowl.
Step 3
Whisk egg and vanilla into the milk and lemon juice mixture.
Step 4
Create a well in the center of the flour mixture, then pour the milk mixture with melted butter into the well, using a fork to stir until there are no longer clumps of flour.
Step 5
Heat a large skillet or griddle to medium heat
Step 6
Measure out 30 grams of batter and spoon onto skillet or griddle in a 4-inch circle
Step 7
Flip when edges look dry and bubbles appear on the surface
