Thailandi Tofu Lettuce Wraps
Thailandi Tofu Lettuce Wraps
Super easy and makes for a terrific filling lunch or snack.
Every time I make these, I ask myself why I’d don’t eat them every day! Savory, sweet with a little spicy kick!
I use the frozen onions and the shredded cabbage from
they just save me so much time in the kitchen - I love having them in my fridge and freezer
For the tofu:
1/2 cup
diced frozen onions
1 block Extra firm tofu (I used a flavored teriyaki one but you can use plain)
1 handful
shredded green cabbage
For the spices:
1 tbsp dried parsley
1 tsp. Garlic powder
1/2 tsp. Onion salt
1/2 tsp. Ginger powder
Pinch of black pepper
3 tbsp. Soy sauce
Get your pan very hot and spray with oil. Add the the onions and cook for a minute. Then add the tofu and break it down was best as you can with your wooden spoon . Add the spices and mix well.
Then add the cabbage and let cook for a few more minutes till the cabbage has wilted and the tofu has a little crust to it.
Remove from heat and set aside
For the peanut sauce:
2 tbsp. Peanut butter (slightly warmed)
3 tbsp. Soy sauce
1 heaping tbsp. Honey
2 tsp. Sesame oil
Pinch of garlic powder and ginger powder
Pinch of salt and pepper
Pinch of crushed red pepper
2 wrap. Dried parsley
Mix everything together till you have a paste sauce
Add the cooked tofu to some butter lettuce, top with the sauce and some fresh shredded carrots for crunch. And EAT!
