Instructions
Step 1
Cook the pasta according to the package instructions in a pot of salted boiling water until al dente. Drain and set aside.

Season the chicken breast pieces with salt, pepper, and a pinch of paprika.

In a large skillet, heat some olive oil over medium heat. Add the seasoned chicken breast pieces and cook until they are browned and cooked through, about 5-6 minutes per side. Remove the cooked chicken from the skillet and set aside.

In the same skillet, add a bit more olive oil if needed. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.

Stir in the paprika and cook for another minute to release its flavors.

Add the tinned tomatoes to the skillet, breaking them up with a spoon. Let the sauce simmer for about 10-15 minutes, allowing it to thicken slightly.

Once the sauce has thickened, add the Maggi sauce (or soy sauce) and season with salt and pepper to taste.

Stir in the fresh spinach leaves and cooked chicken pieces, and cook until the spinach is wilted and the chicken is heated through, about 2-3 minutes.

Add the cooked pasta to the skillet and toss until it's well coated with the tomato sauce, spinach, and chicken.

Sprinkle the shredded cheddar cheese over the top of the pasta mixture. Cover the skillet and let it sit for a couple of minutes until the cheese is melted and bubbly.

Once the cheese has melted, remove the skillet from the heat and serve the pasta hot, garnished with some fresh herbs if desired.
