Step 1
Cut the provola into cubes. Take the eggs and place them in a bowl together with the milk, a pinch of salt and parmesan. With a fork we mix everything well. We heat a knob of butter in a pan, add the eggs and immediately the provola. As soon as the edge of the pan begins to glaze, bring the eggs from the outside towards the inside and gradually mix everything, reducing them to stracciatella. Don't cook everything for more than 1-2 minutes on medium heat. Once ready, serve them on crusty bread
