Broccoli fritters 🥦
I use to make these for Zac loads when weaning! It’s a really simple and delicious recipe that can be adapted as your little one gets older, perfect for weaning and adults! You can introduce spices to these and more flavour as they grow!
You can batch cook these and freeze them.
You will need:
4 florets of broccoli (cooked)
1 medium potato (cooked)
1 large egg
Handful of mozzarella and cheddar mix
2 tbsp flour
Start by cooking (boil/steam) your broccoli and potato until soft. In a bowl add the veg, flour, egg and cheese. Mix really well. Take a hot pan with a little oil and add 2tbsp of the mix . Do a few at a time. Let cook on one side for around 3 mins and flip over. Now let cook on the other side. Let cool slightly and enjoy!
