Instructions

Step 1
Preheat the oven to 400°F
Step 2
Heat olive oil in a pan over medium high heat and saute the onions, garlic, mushrooms and carrots until golden.
Step 3
Season with salt and pepper, then add the rosemary. Cook for about 5 minutes.
Step 4
In a separate pan add the minced meat and thyme, cool stirring frequently to break up the meat until browned.
Step 5
Add the minced meat to the vegetable pan once the meat has been drained of excess fat.
Step 6
Add the minced meat and tomato puree to the vegetables. Incorporate the puree, then add the wine and reduce by half
Step 7
Season with salt and pepper and then add stock and Worcestershire sauce. Simmer for 15-20 minutes.
Step 8
In the meantime boil the potatoes until done, 10-20 minutes depending on how you cut the potatoes .
Step 9
Test the potatoes for doneness with a fork. Then drain the potatoes when cooked.
Step 10
Put the potatoes back on the stove to steam dry them and remove excess moisture.
Step 11
Add the butter and egg yolk and mash potatoes thoroughly.
Step 12
Add half the Parmesan to the taters and mix. Season
Step 13
Place the meat mixture in an oven proof dish and spoon the taters on top.
Step 14
Sprinkle the remaining Parmesan on top. Can finish with a drizzle of olive oil (optional).
Step 15
Bake for 20-30 minutes until taters are at your desired level of slightly browned on the peaks.
